The champagne Cuvée des Moines Blanc de Blancs Grand Cru from the Besserat de Bellefon house is made exclusively from chardonnay. The house aims for a pressure of 4,5 atmospheres instead of 6 atmospheres in order to obtain a particularly fine mousse. The bubbles in this champagne are, according to your own statement, 30% smaller than those in other champagnes. The style of the house is focused on champagne/wines that can be drunk with meals.
